What is a technological map? This is a list of ingredients and semi-finished products with an indication of weight and losses during processing, a detailed step-by-step cooking technology, a photo of the finished dish (optional). Everything that differs from this format is not a technological map !!

Do you use a similar format? Or does the Chef, when developing new dishes, provide the accounting department with a list of ingredients in an arbitrary form? And one can only dream about the cooking technology.

So why doesn’t the Chef write a technology ???
📍The first is simple laziness
📍The Chef insures himself against replacement. He believes that he is as irreplaceable as possible, since only he knows how to cook
📍Not confident in his actions and not enough qualifications!
📍Complete lack of knowledge on standardizing kitchen work

Most Chefs take this position quite young, not yet having the proper life and professional experience. They get the position due to ambition. And having achieved their goal, they continue to develop exclusively in the direction of creativity, not standardization of processes.

And the chefs in the processes, having a list of ingredients and no cooking instructions, will cook as their experience tells them, because the Chef cannot be in the kitchen all the time and in all the processes at the same time.

No clear Map – no life! The Chef begins to be “pulled” during work, on weekends. A lot of problems and routine, and in the end, not a great position, but a headache and work 24/7.
