Why don’t standards work in the kitchen?

Have you ever wondered why standards don’t work in your kitchen?
Do you attend standardization trainings, train cooks, but every day you get dishes that taste different, with unpredictable serving times and a number of other difficulties?
In fact, most establishments (70-80%) fail to achieve standardization!

It’s simple, you just need to remember 7 simple rules:

1. Maybe your Chef didn’t study anywhere in particular and doesn’t have enough life and professional experience. Or the Chef looks at training in terms of beautiful food, which is difficult to repeat and sell!
2. The Chef has a sincere delusion that he should be engaged in creativity – this is his main purpose! The Chef does not understand that he is first and foremost a Manager! The head of his unit! And an artist only when other processes are established!
3. Your Chef studies at trainings with very successful teachers who constantly gather full classrooms. They publish mountains of their UNIQUE books and methods! For example, how to manage a kitchen! And at the same time they have NEVER worked in a kitchen and know about the work only by hearsay.
4. After trainings, you expect and demand too fast changes! But, most of the information was rejected by the Chef! Due to distrust of the speaker without Real experience! As practice has shown, chefs do not take a speaker without experience in the kitchen seriously.
5. You require the Chef to perform various check lists, line checks, etc. And at the same time you do not have the correct technological map! Too many instructions lead to deterioration and slowing down of the kitchen work!
6. Systematize and unify documents! Do not use templates. Develop standards specifically for your facility! Conduct training, create the right control tools.
7. The Chef does not understand economics and management! The Chef should be motivated to make a profit! Remember, the Chef is the head of his unit, he must cook deliciously and understand numbers! This is not negotiable!!!

📍Standardization is a series of continuous and constantly requiring adjustment of tools. Develop, implement, control and adjust! Start with the correct technological map. And gradually bring your project to perfection!
