What is a technological map? This is a list of ingredients and semi-finished products with an indication of weight and losses during processing, a detailed step-by-step cooking technology, a photo of the finished dish (optional). Everything that differs from this format is not a technological map !!

\nMost Chefs take this position quite young, not yet having the proper life and professional experience. They get the position due to ambition. And having achieved their goal, they continue to develop exclusively in the direction of creativity, not standardization of processes.

\nAnd the chefs in the processes, having a list of ingredients and no cooking instructions, will cook as their experience tells them, because the Chef cannot be in the kitchen all the time and in all the processes at the same time.
